Our Favourite Recipe No.3


ELDERBERRY WINE (or SLOE)

- 675g(1.5lb) dried elderberries

- 1125g(2.5lb) sugar

- 225g(0.5lb) raisins

- 1 teaspoonful citric acid (or juice of 1 lemon)

- 1 teaspoonful pectic enzyme

- 1 packet nutrient

- Yeast

Put the elderberries, raisins and sugar into a clean, white, food grade plastic bucket and pour over them 0.95 liter(2 pints) of boiling water. Add citric acid and stir to dissolve the sugar. Add a further 2.35 liter(5 pints) of cold water and allow to cool to room temperature (20C(68F) approx). Stir in the pectic enzyme, nutrient and yeast. Cover and allow to ferment for one week, stirring ever day.

Strain juice into a demi-john and fit a fermentation lock.

When fermentation is complete, rack wine and add 2 campden tablets and wine stabiliser. Bottle when wine is clear and still. Store in cool dark place.
